Executive Chef Joseph Holmes is responsible for the daily culinary operations of One Lincoln. With over 30 years of both restaurant and hotel culinary experience, Chef Holmes most recently served as the Executive Chef for the Harrisburg Hilton where he held total operational responsibility for all food outlets. In this position, he helped the hotel achieve Golden Sheaf status and maintained the AAA Four Diamond status for 15 consecutive years.
One of Chef Holmes’ most important responsibilities for One Lincoln is menu development. “My goal was is capture the essence of classic dishes known throughout the country, but with a contemporary spin that is relevant to the current guest,” said Executive Chef Joseph Holmes. “I strive to create a menu that features dishes that were recognizable and familiar to our customer so that they felt comfortable when ordering. But when the dish arrived, I want there to be a positive ‘wow’ factor, in both presentation and taste.”
One Lincoln offers casual comfort food that puts a contemporary twist on familiar dishes like onion soup, chicken and biscuits, crab macaroni and cheese, and scallops. There are also the more common items like burgers, sandwiches, and salads. The collective offerings conjure up memorable dining traditions such as gathering by the fire and experiencing the season, while exciting the palate with unique surprises like sherried mushrooms, Gorgonzola fondue, pepper mayonnaise, and chive mashed potatoes. “I believe we achieved our goal of creating a menu that mirrors the values of the hotel – at its core, it contains traditional and time-honored dishes but also provides the requisite contemporary flare to the more discerning demographic who is visiting and living in Gettysburg,” said Chef Holmes.
